“I was always fascinated as a young boy by my grandmother’s kitchen. Working at the Province House of Brabant she used to cook for kings, barons, ambassadors and ministers. I was particularly curious about the techniques involved in pastry baking and before long decided that chocolate was to be my lifelong profession. Although I am a technical advisor to the world’s most famous chocolate manufacturer, I have a special passion for chocolate sculpture and produced two chocolate figureheads for two famous Belgian Eurosong entrants, each weighing around 40kg. But perhaps my strangest experience as a chocolate maker was to judge the best shaped female nipple that was to form the model for a moulded chocolate nipple competition. One of the perks of the job, I guess.”
