“As a student at the Namur Ecole Hôtelière, I was destined to follow in the footsteps of Paul Bocuse but a sudden strike of lightning forced a change of direction. My mother used to make chocolates in her spare time and after completing an apprenticeship, opened her own chocolatier. Her success inspired me to take over the family business. In my chocolate creations, I always try to balance the search for new tastes with a respect for the character of traditional chocolate. Quality is of utmost importance to me. I refuse to work with inferior ingredients. I am excited about going to Shanghai. I am very passionate about Chinese cuisine and culture and have travelled to China with my wife, who is Chinese, every since 1983. My dream is to one day open my own shop in Beijing dedicated to chocolate.”
