“From the very beginning of my studies in baking in Namur, it was clear to me that I wanted to become a chocolatier. I am particularly fascinated by working and creating with sugar and was awarded 2nd place in an international competition on working with sugar. My specialities, not surprisingly, include nougatine and caramel. I think Shanghai will be a very rewarding experience and will give me the opportunity to demonstrate traditional methods while exchanging new ideas.”
